Introducing Hello Coffee’s second spirit infusion experiment.
The Last Embers is a collaboration with the Winter Wild festival, here in Apollo Bay Vic. https://www.winterwild.com.au/ We set out to create something special for night-time coffee drinkers and this was our result. Using our custom spirit infusion technique, we’ve layered a spiced rum over a soft, chocolatey Nicaraguan coffee resulting in a drink that’s richer and sweeter than you’d think possible.
The process has taken the brown sugar and vanilla of the spiced rum and carried it right through to the cup. As lovely as this coffee is by itself we think it is a fantastic base for cocktails and more elaborate coffee recipes.
Winter Wild old fashioned:
60mL cold brew coffee (Last Embers)
30mL whisky or bourbon
10mL maple syrup
20mL freshly squeezed orange juice
For cold brew, we reccommend brewing for 12-24 hours in the fridge with an 8-1 ratio of water to coffee, coarsly ground.
